Cheesecake with homemade cherries jam

I'm sorry, I know I'm late! I've left behind this part of the blog a little bit, but here I'm again for you to enjoy some of the new recipes I've been posting in the Spanish version of the blog.


Today, I bring you a delicious and soft cheesecake with homemade cherries jam. No bake!!!

Ready to note down the ingredientes?  Here we go!

40 min + 2 h jam +12 h  pie in the fridge + 6 h jam in the fridge

Ingredientes for the base:

  • 3 plain cookies wrappers
  • 100 gr butter

Ingredients for the pie: 

  • 750 gr soft cheese
  • 1/2 glass of skimmed milk
  • 6 tbsp. of icing sugar
Ingredients for the jam (if you don't want to cook it, you can buy it. In this case, you'll need 200gr. You can choose any red berry jam) 

  • 500 gr cherries
  • 100 gr sugar
  • 2 tbsp. lemon juice
  • 4 gelatine leaves



Method: 

  1. Base: grind the cookies and mix them with the soft butter that we had put it previously in the microwave for 30 seconds. Once it is done, spread it all over a mould. Then, squash it with your palm until creating a solid base. Cover it with clingfilm and put it on the fridge. Now, it's time to prepare the filing. 
  2. Filling: dissolve the gelatine leaves in the milk on a pot and put it on the heat. When it starts to boil, mix it with the cheese and the icing sugar. Take the mould off the fridge and pour the milk mixture into it. Leave it in the fridge for 12 hours. 
  3. Jam: wash up the cherries and remove the seeds. Once it is done, put the cherries on a big pot together with the sugar and the lemon juice over low heat for two hours. Then, strain the jam and mix it with the gelatine leaves. Take the pie off the fridge and pour the jam all over it. Again, leave the pie on the fridge for 6 hours. Now, it is ready to serve!
